To the bowl of a food processor, add shrimp and scallops and a heavy pinch of salt and blend until a homogenous mixture forms. 2. Transfer to a medium mixing bowl and add the remaining chunks of lobster. Gently stir to combine and taste for additional seasoning. 3. Add flour and panko onto two separate plates. Add egg to a medium, shallow bowl and whisk with a fork. 4. Form lobster mixture into patties and lightly coat in flour, then egg, and then panko bread crumbs. Set patties on a sheet tray and place in the freezer to slightly firm. 5. Into a medium bowl, add chopped pickle, dill, and a glug of kewpie mayo. Mix until fully incorporated. 6. Preheat a large skillet over medium-high heat and add oil. 7. Once the oil is shimmering, add lobster patties and cook until golden brown on both sides. 8. Turn off the heat, then add 1 slice of cheese per patty and cover with a lid to allow the cheese to melt. ASSEMBLY Add tartar sauce to the bottom of the toasted brioche bun. Top with lobster patty, and tartar sauce.
