CHICKEN AND DUMPLINGS RECIPE
Chicken Stew
3 tbsp olive oil
4 chicken legs with thighs, cut into pieces
Salt and pepper
1 onion, diced
1 leek, finely sliced
2 celery stalks, sliced
1 carrot, chopped
3 tbsp dijon mustard
1 cup white wine
1 tbsp fresh thyme
1L chicken stock
2 cups button mushrooms
Dumplings
2 cups all purpose flour
1 tbsp baking powder
1/4 tsp salt
1/4 cup green onion thinly sliced.
3 tbsp melted butter
3 tbsp sour cream
1/2 cup buttermilk
Parsley Salad Garnish
1/2 cup roughly chopped parsley
1/4 cup thinly sliced shallot
Juice of half lemon
2 tbsp olive oil
Directions:
1. Heat oil in a large pot over medium high. Add in chicken pieces then season with salt and pepper.
2. Cook chicken pieces until brown on all sides, about 5 minutes, flipping the pieces as they brown.
3. Add in onion, leek, celery carrot and continue to cook until vegetables begin to soften and become fragrant, about 5 minutes
4. Make a well in the middle of the mixture and spoon Dijon mustard into the well.
5. Stir in white wine and cook until liquid reduces by half, about 3 minutes
6. Add in thyme, chicken stock and button mushrooms. Bring to a quick boil then immediately reduce heat to simmer.
7. Make the dumplings by mixing the flour, baking powder, salt and green onion.
8. Add in melted butter, sour cream and buttermilk. Stir until just combined.
9. Using two spoons, form mixture into quenelles about 3 tablespoons each. Drop quenelles into the gravy and cover until they rise to the top and get fluffily, about 20 minutes. Do not peek!
10. Meanwhile, make the garnish by mixing the parsley, shallot, lemon juice, and olive oil together
11. Divide gravy and dumplings among bowls. Garnish with parsley salad.
