Remove the lobster from their shells using kitchen scissors, then cut the tails into quarters. 2. In a medium mixing bowl, whisk together buttermilk, egg, and hot sauce. 3. In a large mixing bowl, add flour, cornstarch, spices and salt. Whisk together well to combine. 4. In a large, heavy-bottomed pot over medium heat, add 1 ½ inches of vegetable oil and bring to 350°F. 5. Dip each lobster nugget into the wet mixture, then into the dry mixture. Shake off any excess, then add to the oil. Add 6-8 lobster nuggets and fry until golden brown, then remove with a spider and transfer to a paper towel lined sheet tray.
