Raiza Makes Gorgeous Flower-Shaped Apple Tarts | The Sweet Side of Life

Raiza Costa’s garden-inspired tarts are beautiful — and especially tasty, thanks to a caramelized white chocolate filling. Start the floral apple tarts by making the caramelized white chocolate filling to a golden brown color. Add white chocolate to food processor with gelatin and water mixture, warm mile and heavy cream. Transfer to a bowl, add walnuts to the mixture and then refrigerate two hours. Make a crust called a pate brisee, bake and then fill with white chocolate. Finish by fashioning apple slices into the shape of a flower.
