In a different pot, boil mutton pieces with bay leaves, cloves, star anise, cinnamon sticks, turmeric and salt for 1.5 hours. In a wok, heat oil, add curry leaves and fry shallots. Then, add dried red chilli and ginger-garlic paste and cook until brown.
